Coconut Lime Wild Rice

This coconut lime wild rice is packed with flavor. It makes a great side to healthy meal with some grilled chicken and roasted brussels sprouts. The fat from the coconut milk makes it rich and creamy while the lime and fresh parsley brightens it up.

 

 

Ingredients:

  • 1 cup of wild rice mix
  • 1 can of coconut milk
  • 1/4 cup of water
  • 1 tsp chicken or veggie bouillon powder
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • Pinch of chili flakes
  • Zest and juice of 1 lime
  • 1/3 cup of chopped parsley

 

Directions:

I highly recommend soaking your rice for 10 minutes before you cook it and rinsing it thoroughly. If you skip this it can make your end result a bit gloopy.

Check the instructions on your wild rice mix, you may need to adjust the cook time if yours instructs you to cook it for more or less time. I have found most wild rice cooks in around 45 minutes.

In a small pot add the rice, milk, water, bouillon, and spices. Bring to a boil then reduce the heat to low and simmer covered for 45 minutes. Remove from heat and let sit for 10 minutes.

After it has rested stir in the chopped parsley and the lime juice and zest.
