Ginger Apple Chutney

Chutney is a wonderful condiment to add into to your regular line up. It brings such a bright sweet and acidic flavor to any dish. This chutney is made with tart green apples, savory red onions, and a powerful punch of ginger.



This is my own rendition of chutney that I created specifically for the flavor profile I was looking for. It’s really easy to make and will keep for a quite a while.



Whenever you feel like something may be missing from a dish, often it is just a touch of acidity. Adding just a little will bring much more depth to your dish and lift anything that might be feeling heavy or flat.



Ingredients:

  • 1 Tbsp oil
  • 1 onion diced
  • 3 green apples chopped
  • 2 inches of minced ginger
  • 3/4 cup apple cider vinegar
  • 1/2 cup brown sugar
  • 1 Tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp Garam Masala
  • 1/2 tsp cinnamon
  • 1/2 tsp salt


Directions:

Heat the oil in a pot over medium heat, add the onion and sauté for a few minutes until just softened. Add in the remaining ingredients to the pot and reduce to a simmer. Allow to cook for 1 hour stirring occasionally. You won’t need to cover it, it will need to reduce down quite a bit, only cover if it starts to look a little too dry.

Let cool and pour into a jar or airtight container. Store in the fridge for up to 2 weeks, or freeze until ready to use.
