Tortellini Soup

This soup is like the ultimate comfort food for me, it’s like the best of both worlds between pasta and soup. I love tortellini, and honestly after trying it in this soup, this is my favorite way to eat it. The broth is flavorful and creamy, but much lighter than a typical pasta dish, so it doesn’t feel too heavy when you get a bite of tortellini or sausage.

 

Ingredients:

  • 2 Tbsp butter
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 carrot diced
  • 2 stalks of celery diced
  • 2 12 oz packages of chicken sausages chopped
  • 28 oz can of diced tomatoes
  • 1 can of Rotel
  • 4 cups chicken broth
  • 2 cups of water
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp sage
  • 1 tsp oregano
  • 1 tsp thyme
  • Pinch of chili flakes
  • 1 8oz package cream cheese
  • 20oz package of cheese tortellini
  • 5 oz (about 4 cups) spinach chopped

 

Directions:

In a large pot over medium high heat melt the butter. Toss in the diced onion and sauté until softened. Add in the garlic, carrot, and celery and cook for 2-3 minutes. Next mix in the chopped sausage and cook for 3 minutes more stirring frequently.

Pour in the tomatoes, Rotel, broth, water, and spices then simmer for 10 – 15 minutes.

Stir in the cream cheese, when it is fully melted add in the tortellini and spinach. Simmer until the tortellini is fully cooked through, about 15 more minutes.
